Set the oven to 375°F (190°C). Grease a mini muffin tin.

In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, 1/4 cup ketchup, and mustard until evenly combined.

Scoop approximately 2 tablespoons of the meat mixture, flatten it, place a cheese cube in the center, and roll into a ball. Place each ball into the greased muffin tin.

Mix the remaining 1/4 cup ketchup with mustard. Spoon a small amount onto the top of each meatball bite.

Bake the meatloaf bites for 18–22 minutes, or until browned and cooked through with an internal temperature of 160°F (71°C).

Let the bites cool for 5 minutes, garnish with chopped parsley if desired, and serve warm.
