Cheesy Taco Lasagna Dinner (Print Format)

Easy layers of beef, cheese, beans and tortillas for a fun, crowd-pleasing family meal on busy weeknights.

# Ingredients:

→ Main Ingredients

01 - 6 soft taco size flour tortillas
02 - 1 (16-ounce) can refried beans
03 - 1 pound ground beef
04 - 1 envelope taco seasoning
05 - 4 cups grated cheddar cheese
06 - 2/3 cup water

→ Optional Ingredients

07 - 1/2 cup chopped onion
08 - 1/2 cup chopped bell pepper
09 - 1 tablespoon minced garlic
10 - 1 (14-ounce) can Mexican-style diced tomatoes
11 - 1 (15-ounce) can black beans, drained and rinsed

# Steps:

01 - In a large skillet, cook the ground beef over medium heat until no longer pink. If using onions, garlic, or bell peppers, cook them with the beef simultaneously. Once browned, add 2/3 cup water and the taco seasoning. Simmer for 5 minutes. Incorporate optional ingredients like tomatoes or black beans into the beef mixture and simmer, uncovered, for an additional 5-10 minutes.
02 - Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
03 - Place 2 tortillas at the bottom of the baking dish. Spread half of the refried beans over the tortillas (microwave the beans to make spreading easier). Top with half of the beef mixture and 1 heaping cup of cheese. Repeat the layers once more. Place the remaining 2 tortillas on top, followed by the rest of the cheese.
04 - Cover the dish with foil and bake for 25 minutes. Uncover and bake an additional 10 minutes, or until the cheese begins to brown slightly.
05 - Serve with optional toppings such as lettuce, sour cream, avocado, cilantro, or salsa. Refrigerate any leftovers for up to 3 days.

# Tips:

01 - Microwaving the refried beans briefly makes them easier to spread over the tortillas.
02 - Customize layers with your favorite taco or burrito fillings.
