Cherry Chocolate Shortbread (Print Version)

# Ingredients:

01 - ¾ cup chopped maraschino cherries, patted dry.
02 - 2 cups plain flour.
03 - ½ cup fine powdered sugar.
04 - ½ teaspoon salt.
05 - 1 cup softened unsalted butter.
06 - ⅔ cup chocolate chips.
07 - ½ tablespoon vanilla essence.

# Instructions:

01 - Combine salt and flour in a bowl, then leave it aside.
02 - Whip powdered sugar with butter until airy, then stir in vanilla.
03 - Slowly stir the dry mixture into the wet ingredients until it clumps up.
04 - Mix in the cherries and chocolate pieces gently.
05 - Roll into a log shape about 2 inches thick, cover it up, and cool in the fridge for 1-2 hours.
06 - Cut the cold log into ¼-⅓ inch slices and bake on 325°F for 10-15 minutes.

# Notes:

01 - Make sure cherries are completely dry.
02 - Don’t skip chilling the dough well.
03 - Pinch and fix broken slices back together before baking.
