Turn on your oven to 350°F (175°C). Line an 8x8 pan with parchment paper and leave some extra over the edge so you can pull the bars out easily when they cool.

Grab a medium-sized bowl and toss in the flour, baking powder, salt, and cinnamon. Give it all a good whisk until combined.

In a bigger bowl, stir the melted butter and sugar together until smooth. Add the eggs one at a time, mixing after each. Finish by stirring in the vanilla.

Combine the dry mixture with the wet mixture gradually. Stir it just until it’s mixed and then pour the batter evenly into your lined pan.

Mix the cinnamon and sugar left for the topping, then spread it over the batter so it’s covered evenly.

Pop the pan in the oven and bake for 25 to 30 minutes. When the edges are golden and a toothpick comes out with just a few crumbs, it’s done. Don’t overdo it—the bars should stay chewy and soft!

Let the bars cool fully while still in the pan set on a cooling rack. Use the parchment paper to lift them out once cool, then cut into whatever size pieces you want.
