Soft Cinnamon Bars (Print Version)

# Ingredients:

→ For the Bars

01 - 1 cup unsalted butter, melted
02 - 1 teaspoon vanilla extract
03 - 1 1/2 cups granulated sugar
04 - 2 teaspoons baking powder
05 - 2 large eggs
06 - 1 teaspoon ground cinnamon
07 - 2 cups all-purpose flour
08 - 1/2 teaspoon salt

→ For the Topping

09 - 1 teaspoon ground cinnamon
10 - 2 tablespoons granulated sugar

# Instructions:

01 - Turn on your oven to 350°F (175°C). Line an 8x8 pan with parchment paper and leave some extra over the edge so you can pull the bars out easily when they cool.
02 - Grab a medium-sized bowl and toss in the flour, baking powder, salt, and cinnamon. Give it all a good whisk until combined.
03 - In a bigger bowl, stir the melted butter and sugar together until smooth. Add the eggs one at a time, mixing after each. Finish by stirring in the vanilla.
04 - Combine the dry mixture with the wet mixture gradually. Stir it just until it’s mixed and then pour the batter evenly into your lined pan.
05 - Mix the cinnamon and sugar left for the topping, then spread it over the batter so it’s covered evenly.
06 - Pop the pan in the oven and bake for 25 to 30 minutes. When the edges are golden and a toothpick comes out with just a few crumbs, it’s done. Don’t overdo it—the bars should stay chewy and soft!
07 - Let the bars cool fully while still in the pan set on a cooling rack. Use the parchment paper to lift them out once cool, then cut into whatever size pieces you want.

# Notes:

01 - Want a crispy top? After baking, pop it under the broiler for a minute or two. Just keep an eye on it so it doesn’t burn!
02 - Not big on cinnamon? Feel free to adjust the amount you add both in the batter and the topping.
03 - For something sweeter, you can whisk powdered sugar with milk and cinnamon to make a glaze. Drizzle it over before serving.
04 - Keep these soft in an airtight container at room temperature for up to 3 days.
