Chicken Avocado Quesadillas Flavor (Print Format)

Crisped tortillas packed with chicken, avocado, peppers, fresh lime and cheese—ready in under half an hour.

# Ingredients:

→ Chicken

01 - 2 medium boneless, skinless chicken breasts
02 - Kosher salt
03 - Freshly ground black pepper
04 - 2 teaspoons olive oil, divided
05 - 1 small onion, finely chopped (about 1/2 cup)
06 - 1 cup diced bell peppers (any color)
07 - 3 garlic cloves, finely chopped
08 - 1/2 cup diced tomatoes
09 - 2 tablespoons fajita or taco seasoning

→ Quesadillas

10 - 4 medium flour tortillas
11 - 1 avocado, seeded and sliced
12 - 4 teaspoons low-fat sour cream
13 - 1/2 cup low-fat mozzarella, Mexican blend, or cheddar cheese
14 - Fresh lime juice (optional)
15 - Minced cilantro (optional)

# Steps:

01 - Heat a large heavy-duty pan over high heat. Season the chicken breasts with salt and pepper. Add 1 tablespoon olive oil to the pan and cook the chicken for 5-6 minutes per side until cooked through. Remove from the pan and allow to rest.
02 - In the same pan, add 1 tablespoon olive oil. Stir in the diced onion, bell peppers, and garlic, cooking for 2-3 minutes until softened. Add the tomatoes and fajita seasoning, and cook for an additional 2 minutes until the tomatoes are softened. Dice the cooked chicken and return it to the pan, stirring until fully combined.
03 - Add 1 teaspoon olive oil to a hot pan. Place two tortillas in the pan. Spread 1 teaspoon sour cream on one side of each tortilla, then layer with cheese, avocado slices, and the chicken mixture. Squeeze lime juice over the fillings and sprinkle with minced cilantro if desired. Fold the tortillas over the fillings into a half-moon shape.
04 - Cook the folded quesadillas until the tortillas are golden and crisp, and the cheese has melted, about 2-3 minutes on each side. Repeat the process to make 2 more quesadillas.
05 - Cut the quesadillas into wedges. Serve immediately with lime wedges, sour cream, salsa, or guacamole.

# Tips:

01 - For homemade fajita seasoning, mix 1 teaspoon chili powder, 1 teaspoon smoked paprika, 1 teaspoon salt, 1 teaspoon cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon black pepper.
