Buffalo Chicken Alfredo (Print Version)

# Ingredients:

01 - 4 ounces blue cheese crumbles.
02 - 1 tablespoon butter for heating chicken.
03 - 12 ounces grilled chicken breasts, chopped.
04 - 3/4 cup buffalo sauce.
05 - 1 teaspoon garlic powder.
06 - 6 ounces Monterey Jack, shredded.
07 - 1/2 cup unsalted butter.
08 - 1/4 cup sliced green onions.
09 - 1 1/2 cups whole milk.
10 - Salt and pepper as you like.
11 - 1 pound penne or similar pasta.
12 - 8 ounces cream cheese, softened.

# Instructions:

01 - Salt the water and cook pasta until just tender. Drain it and leave it aside.
02 - In a saucepan, melt butter on low heat. Stir in cream cheese and garlic powder until smooth.
03 - Slowly pour in the milk. Mix in the buffalo sauce and cheese, stirring until thick and creamy.
04 - In a pan, heat butter over medium. Toss in chicken and warm through for about 6-10 minutes.
05 - Combine the sauce with the cooked chicken. Add the pasta and mix everything until well coated.
06 - Top with a drizzle of buffalo sauce, green onions, and crumbled blue cheese before serving.

# Notes:

01 - Let milk and cheese sit out to warm up before starting to avoid splitting the sauce.
02 - For smoother sauce, shred cheese right before using.
03 - You can swap penne for your favorite pasta shape.
