Chicken Fajita Casserole Bake (Print Format)

Shredded chicken with bell peppers and cheddar, baked in a zesty fajita-spiced casserole, garnished with fresh cilantro.

# Ingredients:

01 - 3 cups shredded chicken
02 - 1 tablespoon olive oil
03 - 1 green bell pepper, sliced
04 - 1 red bell pepper, sliced
05 - 1 yellow onion, sliced
06 - 2 tablespoons fajita seasoning mix
07 - ½ teaspoon salt
08 - ¼ teaspoon black pepper
09 - 1 cup salsa
10 - 2 cups shredded cheddar cheese
11 - 2 tablespoons chopped fresh cilantro

# Steps:

01 - Preheat the oven to 375˚F.
02 - In a large saucepan over medium-high heat, add olive oil. Once hot, add the sliced bell peppers, onion, fajita seasoning mix, salt, and pepper. Cook until the vegetables are softened, about 8 minutes. Remove from heat and set aside.
03 - Place the shredded chicken at the bottom of the cooking dish, and top it with salsa. Cover with the cooked bell peppers and onions, then sprinkle shredded cheese on top.
04 - Place the dish in the oven and cook for 20 minutes. Remove from the oven and garnish with fresh chopped cilantro.
05 - Serve and enjoy!
