Easy Mediterranean Meal (Print Version)

# Ingredients:

01 - About 1 cup dried orzo
02 - A couple of handfuls of baby spinach
03 - 2 tablespoons olive oil (extra virgin is great)
04 - 1 teaspoon oregano, dried
05 - A good squeeze of lemon, about 1 whole
06 - 3-4 chicken breasts, skinless and without bones
07 - Salt and pepper, adjust to taste
08 - 4 garlic cloves, finely chopped
09 - 1 cup of cherry tomatoes, sliced in halves

# Instructions:

01 - Follow the cooking directions on the orzo package. Mince the garlic and cut the cherry tomatoes in half.
02 - Warm up the oil in a large pan over medium. Add your chicken, season it, and cook for 6-7 minutes per side until golden.
03 - Add the chopped garlic and tomatoes to the pan. Stir them around, letting them cook until they smell amazing.
04 - Mix the cooked orzo and handfuls of spinach into the pan. Stir it together until the spinach softens.
05 - Drizzle the lemon juice throughout and sprinkle in the oregano. Stir once or twice, then plate and enjoy warm!

# Notes:

01 - Try adding crumbled feta or sliced kalamata olives for a fun twist.
02 - Swap out the orzo with rice or quinoa if you're avoiding gluten.
03 - Leftovers last up to three days if stored in the fridge in a sealed container.
04 - Toss in fresh parsley or basil on top for a pop of color and taste.
