Bright and nourishing salad combining chickpeas, avocado, tomatoes, cucumber, and feta for a wholesome boost.

# Ingredients:

→ Dressing

01 - 3 tbsp extra virgin olive oil
02 - 3 tbsp lemon juice (from 1 large lemon)
03 - 1 garlic clove, pressed or minced
04 - 1/2 tsp sea salt, or to taste
05 - 1/8 tsp black pepper

→ Salad

06 - 1 1/2 cups cherry tomatoes, halved
07 - 1 English cucumber, halved and sliced
08 - 15 oz canned chickpeas, drained and rinsed
09 - 1/2 medium red onion, thinly sliced
10 - 1 avocado, sliced
11 - 1/4 cup chopped fresh cilantro
12 - 4 oz feta cheese, diced

# Steps:

01 - In a small bowl, whisk together olive oil, lemon juice, pressed garlic, sea salt, and black pepper until well combined, or shake in a sealed jar.
02 - Place cherry tomatoes, cucumber, chickpeas, red onion, avocado, cilantro, and feta cheese in a large salad bowl.
03 - Pour the dressing over the salad ingredients and toss gently to evenly coat all components.
