Peel, wash, and chop the potatoes into cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika.

Place the potatoes in an air fryer and cook at 200°C (400°F) for approximately 25 minutes, shaking them a couple of times during cooking.

Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook until browned, then season with chili powder, onion powder, paprika, salt, and pepper. Stir well.

Add minced garlic, diced tomatoes and green chiles, and chili beans to the skillet. Stir everything and simmer for 5 minutes.

Add the crispy potatoes to the skillet and stir to combine. Top with shredded cheddar cheese.

Place the skillet in an oven preheated to 200°C (400°F) for a few minutes, until the cheese has melted.

Top with chopped green onions. Optionally, serve with sour cream and jalapeños.
