Turn the oven on to 400°F.

Combine the chicken with olive oil, parmesan, chipotle, paprika, onion powder, garlic, lemon zest, salt, and pepper in a mixing bowl.

Spread the rice and zucchini into a 9×13-inch dish. Add 2 cups of water. Scatter the butter on top. Then, place the chicken pieces over the zucchini and rice.

Put everything in the oven for 30-40 minutes. The rice will be soft, and the chicken will be done. If the rice isn't fully cooked, add 1/3 cup more liquid, and pop it back in for 10 minutes.

Heat the honey, hot sauce, cayenne, onion powder, chili powder, and some salt in a small pot until combined.

Once the chicken's done baking, drizzle half the honey on top. Serve with rice and zucchini, adding fresh basil and a bit more sauce if you like. Dig in!
