Spicy Chicken Delight (Print Format)

Tender chicken and fluffy rice come together with zucchini in a hot and sweet chipotle honey glaze. Quick and ideal for busy nights!

# Ingredients:

→ Primary Ingredients

01 - 6 pieces of chicken (thighs or breasts, skin on or off)
02 - 1/4 cup grated parmesan
03 - 1/4 cup olive oil (extra virgin)
04 - 1 teaspoon of dried onion powder
05 - 2 teaspoons of fresh lemon zest
06 - 1-2 tablespoons of diced chipotle in adobo
07 - 4 minced garlic cloves
08 - 1 teaspoon of paprika (smoked)
09 - 1 3/4 cups uncooked basmati rice
10 - 2 cups of sliced zucchini
11 - 2 tablespoons of butter (salted)

→ Spicy Honey

12 - 1/2 cup of honey
13 - 3/4 teaspoon chili powder (chipotle)
14 - 2-3 tablespoons of spicy hot sauce
15 - A sprinkle of sea salt
16 - 1/2 teaspoon dried onion powder
17 - 1-3 teaspoons of ground cayenne

# Steps:

01 - Turn the oven on to 400°F.
02 - Combine the chicken with olive oil, parmesan, chipotle, paprika, onion powder, garlic, lemon zest, salt, and pepper in a mixing bowl.
03 - Spread the rice and zucchini into a 9×13-inch dish. Add 2 cups of water. Scatter the butter on top. Then, place the chicken pieces over the zucchini and rice.
04 - Put everything in the oven for 30-40 minutes. The rice will be soft, and the chicken will be done. If the rice isn't fully cooked, add 1/3 cup more liquid, and pop it back in for 10 minutes.
05 - Heat the honey, hot sauce, cayenne, onion powder, chili powder, and some salt in a small pot until combined.
06 - Once the chicken's done baking, drizzle half the honey on top. Serve with rice and zucchini, adding fresh basil and a bit more sauce if you like. Dig in!

# Tips:

01 - You can make it spicier or milder by playing around with how much chipotle, hot sauce, and cayenne you add.
02 - The spicy honey sauce can be prepped in advance and kept in the fridge for 2 weeks max.
03 - Swap the basmati rice for brown rice if you like, but the cooking time and water amount will need tweaking.
