01 - 2 lb chicken breast
02 - Olive oil
03 - 1 tsp salt
04 - 1 tsp black pepper
05 - 1/4 tsp cayenne pepper
06 - 4 tsp chili powder
07 - 2 tsp ground cumin
08 - 2 tsp paprika
09 - 2 tsp dried cilantro
10 - 1 lime, juiced
11 - Fresh or dried cilantro
12 - Large burrito-size flour tortillas
13 - Shredded Chihuahua cheese

→ Chipotle Ranch Ingredients

14 - 3/4 cup mayonnaise
15 - 1/4 cup milk
16 - 1 tbsp lemon juice
17 - 1-2 chipotle peppers in adobo sauce
18 - 1 tsp garlic powder
19 - 1 tsp onion powder
20 - 1 tsp dried dill
21 - 1/2 tsp salt
22 - 1/2 tsp black pepper
23 - 1/2 tsp smoked paprika

# Steps:

01 - Combine all ingredients for the chipotle ranch dressing in a blender and process until smooth. Refrigerate until ready to use.
02 - Cut the chicken into small pieces and place in a bowl. Add olive oil, salt, cayenne, chili powder, cumin, paprika, dried cilantro, and black pepper. Mix until evenly coated.
03 - Heat olive oil in a skillet over medium-high heat. Cook the seasoned chicken until fully done, then add lime juice and fresh or dried cilantro. Stir to combine.
04 - Place shredded Chihuahua cheese and chipotle ranch sauce onto one side of a tortilla. Add cooked chicken and additional cheese. Fold the tortilla in half.
05 - Cook the folded tortillas in a skillet over medium heat until both sides are golden brown and crispy.
06 - Serve the quesadillas with additional chipotle ranch sauce on the side. Enjoy!
