Heat up your oven to 175°C (350°F) and line a baking sheet with foil or parchment for easy cleanup.

Warm 1 tsp of olive oil in a medium-sized skillet over medium heat. Cook the chopped onions, stirring now and then, until they're soft and golden-colored. This takes about 5-7 minutes. Let them cool by transferring them to a plate.

In a big bowl, put together the ground beef, prepared onions, eggs, garlic, ketchup, parsley, breadcrumbs, milk, salt, seasoning, and black pepper. Blend everything gently with your hands until it sticks together. Don’t go overboard with the mixing or the loaf will turn out tough.

Put the meat mixture onto the prepared baking sheet. Mold it into a loaf about 20 cm (8 inches) long, 10 cm (4 inches) across, and 7.5 cm (3 inches) high. Toss it into the oven and bake uncovered for 40 minutes at 175°C (350°F).

Whisk together the ketchup, vinegar, brown sugar, garlic powder, and onion powder in a little bowl until it’s blended smooth.

Spread the sauce you made all over the meatloaf. Place it back in the oven and cook for another 20 minutes, or until a thermometer in the center reads 71°C (160°F). Let the meatloaf sit for 10-15 minutes before slicing into it.
