Classic Meatloaf Glaze (Print Format)

Juicy, flavorful meatloaf with a tangy-sweet glaze. Easy to make and always satisfying.

# Ingredients:

→ Main Meatloaf Components

01 - 2 large eggs
02 - 3 garlic cloves, finely chopped
03 - 1/3 cup milk
04 - 3 Tbsp freshly chopped parsley
05 - 1 tsp salt or as preferred
06 - 1 tsp Italian seasoning mix
07 - 1 medium onion, diced small (1 cup)
08 - 2 lbs ground beef, either 80% or 85% lean
09 - 1 tsp olive oil
10 - 3/4 cup Panko or a gluten-free breadcrumb alternative
11 - 2 Tbsp ketchup
12 - 1/2 tsp black pepper, freshly ground

→ Topping Sauce Ingredients

13 - 1 ½ tsp white vinegar
14 - 1/2 tsp onion powder
15 - 1/2 tsp garlic powder
16 - 2 Tbsp brown sugar
17 - 3/4 cup ketchup

# Steps:

01 - Heat up your oven to 175°C (350°F) and line a baking sheet with foil or parchment for easy cleanup.
02 - Warm 1 tsp of olive oil in a medium-sized skillet over medium heat. Cook the chopped onions, stirring now and then, until they're soft and golden-colored. This takes about 5-7 minutes. Let them cool by transferring them to a plate.
03 - In a big bowl, put together the ground beef, prepared onions, eggs, garlic, ketchup, parsley, breadcrumbs, milk, salt, seasoning, and black pepper. Blend everything gently with your hands until it sticks together. Don’t go overboard with the mixing or the loaf will turn out tough.
04 - Put the meat mixture onto the prepared baking sheet. Mold it into a loaf about 20 cm (8 inches) long, 10 cm (4 inches) across, and 7.5 cm (3 inches) high. Toss it into the oven and bake uncovered for 40 minutes at 175°C (350°F).
05 - Whisk together the ketchup, vinegar, brown sugar, garlic powder, and onion powder in a little bowl until it’s blended smooth.
06 - Spread the sauce you made all over the meatloaf. Place it back in the oven and cook for another 20 minutes, or until a thermometer in the center reads 71°C (160°F). Let the meatloaf sit for 10-15 minutes before slicing into it.

# Tips:

01 - Try swapping out half the beef for chicken, pork, or turkey. With poultry, make sure it’s baked until 74°C (165°F).
02 - Don’t overmix. Too much mixing makes the loaf feel heavy and dense.
03 - Want to use a loaf pan? Line it with parchment so it’s easy to pull out. Bake at 190°C (375°F) and follow the same method for the best results.
