Cottage Cheese Brownie Bites (Print Format)

Creamy chocolate bites made with cottage cheese and cocoa offer a quick, protein-rich no-bake snack for any time.

# Ingredients:

→ Base Ingredients

01 - 1 cup cottage cheese (low-fat or full-fat)
02 - 2 tbsp honey, maple syrup, or sweetener of choice
03 - 1 tsp pure vanilla extract
04 - 1/2 cup unsweetened cocoa powder
05 - 1 scoop protein powder (optional, chocolate or vanilla)

→ Optional Mix-Ins

06 - 2 tbsp chopped nuts or seeds
07 - Handful of mini chocolate chips (optional)

# Steps:

01 - Place cottage cheese, honey or chosen sweetener, and vanilla extract into a blender. Blend on high for 30 to 45 seconds until completely smooth and creamy without lumps.
02 - Transfer blended mixture to a mixing bowl. Stir in unsweetened cocoa powder and protein powder if using. Mix thoroughly until thick and uniform like brownie batter.
03 - Gently fold in chopped nuts or seeds and mini chocolate chips if using, ensuring even distribution without melting chips.
04 - Portion mixture using a tablespoon or small cookie scoop. Wet hands with cold water and roll portions into 1-inch balls. Place bites on parchment-lined baking sheet, spaced evenly.
05 - Refrigerate bites for at least 1 hour until firm. For quicker setting, freeze for 30 minutes. Store in an airtight container in the refrigerator for up to 5 days.

# Tips:

01 - Adjust sweetness by tasting the mixture before chilling and adding more sweetener if desired. If batter is too runny, add more cocoa powder or protein powder; if too thick, add a small splash of almond milk.
02 - These bites are naturally gluten free if protein powder used is certified gluten free or omitted.
03 - For longer storage, freeze bites in a single layer then transfer to a ziplock bag; keep frozen up to 3 weeks.
04 - To serve, allow frozen bites to soften at room temperature for 5 to 10 minutes.
05 - Optional flavor variations include adding peanut butter, peppermint extract, frozen raspberries, or rolling bites in shredded coconut or crushed nuts.
