In a large mixing bowl, combine cream cheese, butter, mint extract, and powdered sugar. Blend using an electric hand or stand mixer for 3-4 minutes until the mixture is very crumbly.

Knead the mixture by hand, shaping it into a round ball.

Cut the ball into 4 equal parts. Place each portion into a small bowl. Add 3-4 dots of gel food coloring to three bowls (one green, one pink, one blue), leaving one portion white. Fold in the food coloring until fully blended.

Prepare a baking sheet with parchment paper. Roll 1 teaspoon-sized balls from each portion and place them on the sheet.

Dip a fork in powdered sugar and press each ball halfway down to flatten.

Allow the mints to rest at room temperature for 4-6 hours before serving.
