Creamy Chicken Bake (Print Version)

# Ingredients:

01 - Halve 3 large chicken breasts down the middle.
02 - Season with salt and black pepper to taste.
03 - 1 tablespoon of olive oil.
04 - 4 tablespoons butter, split into two portions.
05 - 8 ounces of sliced cremini mushrooms.
06 - 2 garlic cloves, finely chopped.
07 - Flour for coating, plus 2 extra tablespoons.
08 - ½ cup of dry cooking sherry.
09 - 1½ cups of thick cream.
10 - 6 Muenster cheese slices.

# Instructions:

01 - Set your oven to 375°F. Slice and season the chicken, then lightly coat with some flour.
02 - In a mix of oil and butter, brown the chicken for about 3-4 minutes per side. Put it in a baking dish.
03 - Cook mushrooms in butter until golden, then layer them in the baking dish.
04 - Stir butter, garlic, and flour together to make a roux. Pour in sherry and cream, stirring until it thickens.
05 - Cover the chicken and mushrooms with sauce, place cheese slices on top. Bake covered for 20 minutes, then broil until golden brown.

# Notes:

01 - Sherry can be replaced with marsala if you want.
02 - Any cheese that melts nicely works for this.
03 - Keep a close eye while broiling to avoid burning.
