Creamy Corn Chowder Bacon (Print Format)

Corn chowder with bacon, potatoes, and chives. Rich, creamy, and loaded with savory flavor in every bite.

# Ingredients:

01 - 4 slices bacon, chopped
02 - 1 onion, small diced
03 - 3 cloves garlic, minced
04 - 4 red potatoes, small diced
05 - 1 (16 oz.) package frozen corn
06 - 4 cups vegetable broth
07 - 1 tsp. dried thyme
08 - Kosher salt and ground black pepper, to taste
09 - 3/4 cup heavy cream
10 - 2 Tbsp. flour
11 - 2 Tbsp. chopped fresh chives

# Steps:

01 - Set Crock-Pot® 6-Quart Express Crock Multi-Cooker to the Brown/Sauté setting.
02 - Once hot, add bacon and cook until crisp, about 6 minutes. Transfer to a paper towel-lined plate.
03 - Add onion to the pot and cook until soft, about 3–4 minutes. Add garlic and cook for 1 more minute.
04 - Stir in bacon, potatoes, corn, vegetable broth, thyme, salt, and pepper.
05 - Adjust pressure to high and twist the cover to lock. Set time for 10 minutes.
06 - Once cooked, remove cover. Stir in heavy cream and flour until combined.
07 - Ladle into serving bowls and top with fresh chives.
