Crispy Beef Cones with Peppers (Print Format)

# Ingredients:

01 - 1 lb ground beef, 80% lean 20% fat
02 - 1 small yellow onion, finely chopped
03 - 1 tbsp fresh garlic, minced
04 - 4 tbsp tomato paste
05 - Salt to taste
06 - 1 tsp black pepper
07 - 1 tsp garlic powder
08 - 1 tsp smoked paprika powder
09 - 1/2 tsp red chili powder
10 - 1 tsp red chili flakes
11 - 1 cup water
12 - 1 cup mixed bell peppers, diced
13 - 1-2 Serrano peppers
14 - 2 tbsp oil

15 - 8 medium tortillas, halved
16 - 8 oz shredded mozzarella cheese
17 - 1 tsp dried parsley for garnish
18 - Cooking spray
19 - Toothpicks

# Steps:

01 - Heat oil in a pan over medium heat. Add chopped onions and garlic. Sauté for 1-2 minutes until translucent. Add ground beef and sauté for 2-3 minutes until it changes color. Season with salt, black pepper, garlic powder, smoked paprika, red chili powder, and red chili flakes. Cook for another 1-2 minutes. Stir in tomato paste until well combined, then add water. Cover and cook, stirring occasionally, until the mixture thickens (10-12 minutes). Once the water evaporates and the beef is cooked, add bell peppers and Serrano peppers. Cook for 3-4 minutes. Remove from heat and set aside.
02 - Preheat oven to 400°F and line a baking sheet with parchment paper. Shape each tortilla half into a cone and secure the seam with a toothpick. Lightly spray the outside of each cone with cooking spray. Place cones seam-side down on the baking sheet. Bake for 8-10 minutes until golden and crisp.
03 - Fill each cone with the beef mixture and shredded mozzarella cheese. Stand each filled cone upright in a loaf pan and bake for 8-10 minutes or until the cheese is melted and bubbly. Garnish with dried parsley and serve warm.
