Lightly coat a small pan with cooking or olive oil spray. Spread the feta across the pan so it covers even the outer edge.

Put the pan over medium heat and leave the cheese to bubble for a few minutes. It should soften and get crispy but not burn.

Carefully crack the egg over the center of the softened cheese.

Sprinkle red chili flakes and oregano on top, then continue cooking the egg until it's done the way you like it (you can go with a soft or set yolk).

While the egg is finishing, warm up your tortilla in the microwave, oven, or on a stovetop. Smash the avocado onto the warmed tortilla, then add a squirt of lemon juice.

Once the egg is fully cooked and the cheese is crisp, slide it out of the pan and gently place it on the avocado-covered tortilla.

Top your creation with some pickled onions and a little chili oil. Best enjoyed hot!
