Perfect Party Potatoes (Print Version)

# Ingredients:

01 - 4 slices of bacon, chopped up.
02 - 2 tablespoons of olive oil.
03 - 2 pounds of small yellow potatoes.
04 - Salt and ground black pepper, use as much as you like.
05 - 1/3 cup of sour cream.
06 - 2 tablespoons of freshly chopped chives.
07 - 3/4 cup of shredded cheddar cheese.

# Instructions:

01 - Get your oven going at 450°F and grease your baking pan.
02 - Toss the potatoes in salted water. Let them simmer for about 15 minutes till soft, then strain and let cool a little.
03 - Spread out the potatoes on the baking pan, gently smash them with a cup, coat with oil, and sprinkle some salt and pepper.
04 - Pop them in the oven for 25 to 30 minutes until they’re crispy and golden.
05 - Sprinkle cheese on top and let them cook for another 2-3 minutes to melt it.
06 - Fry the bacon pieces in a pan until they’re nice and crispy, about 6 to 8 minutes.
07 - Pile on the sour cream, the crispy bacon bits, and sprinkle the chives over everything.
08 - Eat while these are still warm.

01 - These crispy potatoes are perfect finger food for guests. Prep the potatoes in advance by boiling them, then smash and bake when you're ready to serve.
