Get your oven going at 450°F and grease your baking pan.

Toss the potatoes in salted water. Let them simmer for about 15 minutes till soft, then strain and let cool a little.

Spread out the potatoes on the baking pan, gently smash them with a cup, coat with oil, and sprinkle some salt and pepper.

Pop them in the oven for 25 to 30 minutes until they’re crispy and golden.

Sprinkle cheese on top and let them cook for another 2-3 minutes to melt it.

Fry the bacon pieces in a pan until they’re nice and crispy, about 6 to 8 minutes.

Pile on the sour cream, the crispy bacon bits, and sprinkle the chives over everything.

Eat while these are still warm.
