Crispy Sweet Heat Chicken (Print Version)

# Ingredients:

01 - 2 pounds chicken tenders.
02 - 6 cups crushed cornflakes.
03 - 1 teaspoon smoked paprika.
04 - ½ teaspoon each of garlic and onion powder.
05 - ¼ cup grated Parmesan.
06 - 2 eggs, whisked.
07 - 2 tbsp hot sauce for egg wash.
08 - Olive oil, just enough for drizzling.
09 - ½ cup of honey.
10 - 2½ tbsp hot sauce for the glaze.
11 - ¾ tsp chipotle chili powder.
12 - 2 tsp cayenne pepper.
13 - A pinch of sea salt.
14 - Your choice of fresh herbs (cilantro, parsley, thyme) for garnish.

# Instructions:

01 - Set oven to 425°F. Cover baking pan with parchment paper.
02 - Pulse cornflakes, Parmesan, paprika, garlic powder, onion powder, and salt together till fine. Put in a bowl.
03 - Stir the eggs and hot sauce together in a different bowl. Dunk chicken pieces in this.
04 - Press the chicken into the cornflake mix. If you want it crunchier, repeat the egg dip and crumb layer.
05 - Lay the chicken tenders on the pan. Add a little olive oil on top. Cook for 20-25 minutes till golden and crisp.
06 - Towards the end of baking, blend all the sauce ingredients in a pot and heat them up.
07 - Pour some of the warm sauce over the chicken. Sprinkle fresh herbs on top for a nice look.

# Notes:

01 - If you don't have a processor, try smashing cornflakes in a ziplock bag.
02 - Warm up sauce again if it turns thick.
03 - Perfect for a casual family meal.
