Crostini Steak Toppers (Print Version)

# Ingredients:

01 - 1/4 cup tangy horseradish, ready-made.
02 - 1/4 teaspoon granulated sugar.
03 - 1 teaspoon smooth worcestershire sauce.
04 - 1 small garlic clove.
05 - 1 cup creamy sour cream.
06 - 2 tablespoons steak rub or seasoning blend.
07 - 8 ounces tender filet mignon.
08 - 1 onion, chopped finely.
09 - 1 teaspoon light champagne vinegar.
10 - 1 1/2 tablespoons tangy dijon mustard.
11 - 1/2 tablespoon sliced fresh chives.
12 - 2 tablespoons salted butter.
13 - 1/4 cup robust olive oil.
14 - 1 baguette, slightly stale.
15 - Balsamic drizzle for topping.

# Instructions:

01 - Sauté onions in butter and oil for 15-20 minutes till soft and golden. Stir in sugar, then cook for 3-4 extra minutes.
02 - Stir together sour cream, chives, dijon, horseradish, worcestershire, vinegar, plus a pinch of salt and pepper.
03 - Warm grill to 450°F. Coat steak with seasoning and grill for 4-5 minutes on each side. Rest for 10 minutes when done, aiming for 125°F internal for medium rare.
04 - Cut baguette into slices. Coat slices with olive oil, butter, and garlic blend. Bake at 375°F for 5 minutes on each side till crisp.
05 - Spread sauce, place steak slices on crostini, and top with caramelized onions. Add a balsamic drizzle and sprinkle of chives to garnish.
