In a big mixing bowl, toss in the white cake mix, eggs, vegetable oil, and vanilla. Stir everything together until it’s blended smoothly, creating a soft dough texture.

Seal the bowl tightly with plastic wrap and let it sit in the fridge for 30 minutes. This step keeps the cookies from spreading too much while baking.

As the dough chills, warm up your oven to 350°F (175°C). Lay a baking sheet with either parchment paper or a silicone mat to prevent sticking.

When the dough’s nicely chilled, use a spoon or scoop to form small 1-inch balls. Lay them out evenly on the lined baking sheet, leaving 2 inches of space in between each.

Slide the baking sheet into the oven and bake for 8 to 10 minutes. Cookies are ready when they’re slightly set on the edges but remain soft and slightly gooey in the middle. Be careful not to overbake.

Once baked, leave the cookies to cool on the baking sheet for about 2 or 3 minutes. This time allows them to firm up just enough for easier transferring.

Transfer the warm cookies to a wire rack carefully and let them cool off completely. Give them about 20 to 30 minutes before decorating.

Follow the instructions on the candy melts or chocolate wafers packaging. Usually, it’s as simple as microwaving them every 30 seconds and stirring in between until you get a smooth, melted consistency.

Make sure the cookies are fully cooled. Then dip each one about a third to halfway into the melted candy coating. Gently tap off the extra coating by pressing the cookie against the edge of the bowl.

While your candy coating is still soft and tacky, quickly add 3 pastel M&M's or sprinkle on some Easter-themed decorations. You’ll need to move fast since the coating will start to harden as it cools.

Put the cookies back on the parchment paper or cooling rack and give the coating time to harden. This takes 30 minutes at room temp, but you can pop them into the fridge for about 10 minutes to speed it up.
