Preheat the oven to 350°.

In a large skillet over medium-high heat, add the ground beef and chopped onion. Cook and break the ground beef into small pieces as it browns. Drain the fat once cooked through.

Add the taco seasoning to the ground beef according to the packet instructions. Stir in the diced green chilies and ¼ cup of enchilada sauce. Let it simmer for 5 minutes.

Add ½ cup of enchilada sauce to the bottom of a 9 x 13-inch baking dish.

Add two (or more depending on tortilla size) tortillas to the bottom of the dish, ensuring the surface is covered completely. Tear them if necessary to fit.

Spread half of the ground beef mixture evenly over the tortillas. Add half of the beans evenly on top, then sprinkle with ½ cup of shredded cheddar and ½ cup of Monterey Jack cheese. Drizzle ¼ cup of enchilada sauce over the top.

Repeat the layers of tortillas, ground beef mixture, beans, cheeses, and enchilada sauce. End with a final (third) layer of tortillas.

Add the remaining shredded cheeses to the top and drizzle with ¼ cup of enchilada sauce. Cover with foil and bake for 30 minutes or until the cheese is melted.

Let the casserole cool slightly. Add shredded lettuce, diced tomatoes, and diced onion as optional toppings. Slice to serve and enjoy!
