Rich Mushroom Soup (Print Version)

# Ingredients:

01 - Fresh parsley for decoration.
02 - A pound of fresh mushrooms, brown or cremini.
03 - 2 medium onions, chopped finely.
04 - 2 garlic cloves, minced into small bits.
05 - 2 tablespoons plain flour.
06 - 1 teaspoon dried thyme leaves.
07 - 2 cups of broth, any kind—chicken, beef, or veggie.
08 - 2 tablespoons butter, melted.
09 - Salt and black pepper, as you like.
10 - 1 cup of rich heavy cream.

# Instructions:

01 - Rinse mushrooms and cut them into slices.
02 - Finely chop the onions and prepare the minced garlic.
03 - In a big soup pot, melt the butter on medium heat.
04 - Toss in onions and garlic, cooking until they're soft.
05 - Add the mushrooms with thyme and mix well.
06 - Cook for 5-7 minutes, waiting for the moisture to come out of the mushrooms.
07 - Sprinkle the flour into the pot and give it a good stir.
08 - While stirring, slowly pour in the broth.
09 - Keep cooking until the mixture becomes thicker.
10 - Pour in the heavy cream and mix it together.
11 - Gently simmer for another 5-7 minutes.
12 - Sprinkle in some salt and pepper. Garnish with parsley, and enjoy it warm.

01 - Blend part of the soup and mix it back for a smoother taste.
02 - White wine can bring out deeper flavors.
03 - Pair this dish with crusty bread.
