In a large skillet, warm up the oil over medium heat. Let the sausages cook until they get a nice golden color, roughly 6-8 minutes.

Take the sausages out, slice them into chunks, and wrap them with foil to keep them warm.

Toss the onions into the skillet and cook gently for 2 or 3 minutes. Let them go soft and start to color a little.

Stir the curry powder and flour into the cooked onions until it's all combined.

Pour the broth in bit by bit, mixing continuously until the sauce is smooth.

Drop in the carrot slices, along with the salt and pepper. Let this simmer for around 5 minutes.

Add the sausage chunks back in, along with peas and corn. Simmer for two more minutes so everything warms up nicely.
