Savory rice fried with veggies, eggs, and soy sauce. Perfect for quick sides using leftover ingredients.

# Ingredients:

01 - 2 cups cooked white rice
02 - 2 tablespoons butter
03 - ½ cup chopped carrots
04 - ½ cup chopped onions
05 - ½ cup frozen peas
06 - 2 tablespoons minced garlic
07 - 1 teaspoon garlic powder
08 - 2 eggs, beaten
09 - Vegetable oil, as needed
10 - 4 tablespoons soy sauce
11 - 1 teaspoon sesame oil

# Steps:

01 - In a large skillet, melt the butter and sauté the carrots for 5 minutes. Add the onions and lightly season with salt and pepper. Once the vegetables are soft, add the minced garlic and stir for 1 minute.
02 - Add about 1 tablespoon of vegetable oil to the skillet and whisk the beaten eggs into the vegetables. Cook just until the eggs are set, being careful not to overcook them.
03 - Add the cooked white rice to the skillet and drizzle with an additional tablespoon of vegetable oil. Stir in the frozen peas and cook while stirring for 2-4 minutes.
04 - Add the soy sauce, sesame oil, salt, pepper, and garlic powder. Stir thoroughly to coat the rice mixture and cook for an additional 2 minutes.
05 - Plate the fried rice, let it cool slightly, and enjoy!

# Tips:

01 - For best results, use cold leftover rice to prevent clumping while cooking.
