Easy Pecan Pie Cake (Print Version)

# Ingredients:

01 - 1 1/4 cups plain flour
02 - 2 cups finely chopped pecans
03 - 1 tablespoon of vanilla essence
04 - 3/4 cup cooking oil
05 - 4 whole eggs
06 - 2 cups tightly packed brown sugar
07 - A pinch less than 1 teaspoon salt
08 - Optional: powdered sugar for topping

# Instructions:

01 - Set the oven to 350°F. Coat a 13x9 pan lightly with grease.
02 - Beat together vanilla, sugar, and eggs for a couple of minutes until light and bubbly. Add in the oil and salt next, then stir in the flour last.
03 - Gently mix the chopped pecans into the batter. Pour the mixture into your greased pan.
04 - Bake for 30-40 minutes at 350°F. The edges should brown, and the center should firm up.
05 - Let it cool in the pan, then divide it into 24 pieces. Sprinkle with powdered sugar if you'd like.

# Notes:

01 - Swap pecans for walnuts or almonds if you prefer.
02 - You can use either dark or light brown sugar in this.
03 - A bundt pan works fine if you'd rather use that.
