Breakfast Pastry Eggs (Print Version)

# Ingredients:

01 - 8 slices of Black Forest ham.
02 - 6 oz Gruyere cheese, shredded.
03 - Kosher salt.
04 - 2 puff pastry sheets, defrosted.
05 - 8 eggs.
06 - Chopped chives for topping.
07 - Ground black pepper.
08 - 1 egg mixed with 1 tsp water for brushing.

# Instructions:

01 - Set your oven to 400°F and let it heat up.
02 - Take each puff pastry, roll into a large square, and then split it into four smaller squares.
03 - Lay the squares onto baking trays lined with parchment. Use a fork to poke holes in the middle.
04 - Coat the pastry squares with the egg wash and sprinkle on a bit of salt.
05 - Place a slice of ham over each pastry square.
06 - Layer shredded cheese around the edges, keeping the center open for an egg.
07 - Bake for about 10–15 minutes till the edges begin to rise and puff up.
08 - Press the back of a spoon in the center to make a small indent.
09 - Crack an egg into the middle of each square and sprinkle salt and pepper over them.
10 - Bake for another 10 to 15 minutes, or until the egg whites set completely.
11 - Top with chopped chives and serve immediately while hot.

# Notes:

01 - Keep an eye on the baking time since it might change depending on how chilled your pastry is. The pastry should be cool but fully thawed for the best outcome.
