Set your oven to 400°F and let it heat up.

Take each puff pastry, roll into a large square, and then split it into four smaller squares.

Lay the squares onto baking trays lined with parchment. Use a fork to poke holes in the middle.

Coat the pastry squares with the egg wash and sprinkle on a bit of salt.

Place a slice of ham over each pastry square.

Layer shredded cheese around the edges, keeping the center open for an egg.

Bake for about 10–15 minutes till the edges begin to rise and puff up.

Press the back of a spoon in the center to make a small indent.

Crack an egg into the middle of each square and sprinkle salt and pepper over them.

Bake for another 10 to 15 minutes, or until the egg whites set completely.

Top with chopped chives and serve immediately while hot.
