Heat the oven to 400°F (204°C). Cut squares of parchment paper or foil large enough to wrap each garlic head.

Remove loose outer skin from garlic heads, leaving enough for each head to remain intact. Cut 1/4-inch off the top of each head opposite the root end to expose the cloves.

Place each garlic head cut side up in the center of the parchment or foil square. Form a small ring of thyme sprigs around the base of each head. Drizzle with olive oil and season generously with salt and freshly ground black pepper.

Enclose each garlic head by bringing up the parchment or foil sides and sealing tightly, securing parchment packets with kitchen twine when used.

Place the wrapped garlic heads on a baking sheet and roast in the preheated oven for 40 to 70 minutes until cloves are soft, golden brown, and spreadable.
