Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a pan, cook the ground beef over medium heat, breaking it up as it browns. Add taco seasoning, green bell pepper, onion, diced tomato, and garlic. Stir and cook until everything is softened and well combined. Remove from heat and let it cool completely.

Roll out the puff pastry on a clean floured surface. Then evenly spread the cooked beef mixture over the puff pastry, leaving a small border around the edges. Generously sprinkle with shredded cheese.

Starting from one end, tightly roll the pastry into a log. Place it seam-side down and slice into 1-inch pinwheels.

Place the pinwheels on the baking sheet, brush with beaten egg, and bake for 15-18 minutes or until golden brown and crispy.
