# Steps:

01 - Preheat skillet or griddle to medium-high heat. Prepare a surface on your counter for burger preparation, lining it with plastic wrap if needed. Place one burger patty on the counter, cover the top lightly with plastic wrap, and press down evenly using a burger press or the bottom of a stainless steel pan to create a thin patty about 15 cm (6 inches) in diameter. Liberally season the top with seasoning salt and cracked pepper. Repeat with remaining patties, separating each with parchment or wax paper.
02 - Place 1-2 burger patties face down on the preheated skillet or griddle. Do not overcrowd; cook in batches if needed. Season the exposed side with additional seasoning salt and pepper. Cook for about 3-4 minutes. In a separate skillet over medium-low heat, toast the buns (dry) by placing them face down until lightly toasted. Flip the burgers and press down firmly. If not seared properly, increase heat for the next batch. Cook for an additional 3-5 minutes depending on doneness preference. Remove from heat, place cheese on each patty, and stack two patties cheese-to-cheese to replicate the signature style.
03 - For the top bun, apply a few shakes of hot sauce and spread a generous amount of mayonnaise evenly. For the bottom bun, apply ketchup in three concentric rings. Place the prepared patties between the buns and add desired optional toppings. Wrap each burger individually in foil and let rest for 1-2 minutes to ensure the cheese is fully melted.
