Preheat oven to 375°F. Grease a 9×13 inch baking dish with cooking spray and set aside.

Heat olive oil in a large skillet over medium heat. Add diced onions and cook for 5 to 6 minutes until translucent.

Add ground beef to skillet and season with onion powder, garlic powder, salt, black pepper, and thyme. Cook until fully browned, breaking meat into crumbles. Remove from heat and drain excess fat.

In a large mixing bowl, combine browned ground beef, uncooked rice, French onion soup mix, and beef broth. Mix thoroughly.

Grease bottom of prepared baking dish. Pour ground beef mixture into dish. Slice butter into small pieces and evenly distribute on top.

Cover dish tightly with foil and bake in preheated oven for 30 minutes.

Remove foil, sprinkle Swiss and Parmesan cheese evenly over casserole, then bake uncovered for another 30 minutes until top is golden and rice is tender.

Top casserole with fried onions and bake for an additional 5 minutes until onions are crisp.

Sprinkle with fresh parsley and serve warm.
