# Ingredients:

01 - 2 large russet potatoes
02 - 1 cup steamed broccoli
03 - 2 to 3 garlic cloves, minced
04 - 2 tbsp butter, melted
05 - 1/2 cup sour cream
06 - 1 1/2 cups sharp cheddar cheese, grated

07 - 2 New York strip steaks (or ribeye, sirloin, filet), trimmed and cut into bite-sized pieces
08 - Olive oil, for drizzling
09 - Soy sauce, for drizzling
10 - Garlic and herb spice blend
11 - Salt and pepper, to taste
12 - 1/2 stick butter, melted
13 - 3 to 4 garlic cloves, minced
14 - Fresh parsley, for garnish

# Steps:

01 - Preheat oven to 400°F. Wash potatoes, pierce them several times with a fork, and wrap each in foil. Bake for approximately 1 hour or until tender when pierced with a fork.
02 - Once the potatoes are cool enough to handle, cut them in half and carefully scoop out the flesh into a bowl. Add steamed broccoli, minced garlic, melted butter, sour cream, and 1 cup of grated cheddar. Mix gently with a fork to maintain some texture.
03 - Spoon the potato mixture back into the potato skins evenly. Top with the remaining 1/2 cup of sharp cheddar cheese. Place in an air fryer set to 400°F or back into the oven just until the cheese has melted and turned slightly golden.
04 - Drizzle steak pieces with olive oil and soy sauce, then season generously with garlic and herb spice blend, salt, and pepper. Toss to coat evenly and allow to come to room temperature.
05 - Preheat air fryer to 400°F. Arrange steak bites in a single layer and cook for 8 minutes total, flipping halfway through, until achieving medium-rare doneness or preferred level.
06 - In a small saucepan or microwave-safe bowl, melt the butter. Stir in minced garlic and chopped parsley. Keep warm.
07 - Arrange stuffed potatoes on a serving plate, top with cooked steak bites, and drizzle the garlic butter sauce evenly over the top. Serve immediately.
