08 - 3 pounds of pork tenderloin, cleaned up.
09 - 2 tablespoons yellow mustard for tang.

# Instructions:

01 - Set your oven to 375°F while you prep.
02 - Blend together honey, spices, mustard, sugar, and pineapple juice till smooth.
03 - Gently cook the glaze for 15-20 minutes until it thickens nicely.
04 - Slice the tenderloin at ¾-inch intervals, stopping about ½-inch from the bottom.
05 - Cover the meat and the cuts with half the glaze.
06 - Halve the pineapple slices and place a piece into each tenderloin cut.
07 - Roast the pork for 25-30 minutes, aiming for an internal temperature of 145°F.
08 - Turn up the oven to 400°F for the next step.
09 - Apply the rest of the glaze and bake for another 10 minutes until golden and sticky.
10 - Let the meat sit for 10 minutes before you serve it up.
