# Ingredients:

→ Filling

01 - 1 tablespoon olive oil
02 - 1 small onion, finely diced
03 - 2 cloves garlic, minced
04 - 1 pound ground beef
05 - 1 teaspoon chili powder
06 - 1/2 teaspoon paprika
07 - 1/2 teaspoon cumin
08 - Salt and pepper to taste
09 - 1/2 cup cooked rice
10 - 1/2 cup diced tomatoes, drained if canned
11 - 1/4 cup sour cream
12 - 1 cup shredded cheddar cheese
13 - 1 cup shredded Monterey Jack cheese
14 - 1 tablespoon chopped cilantro (optional)

→ Assembling

15 - 4 large flour tortillas
16 - 1 tablespoon butter

# Steps:

01 - Heat olive oil in a skillet over medium heat. Add onions and sauté for 2–3 minutes until soft, then add garlic and cook for another 30 seconds. Add the ground beef and cook until browned, about 6–8 minutes. Drain excess fat.
02 - Stir in chili powder, paprika, cumin, salt, and pepper. Add the cooked rice and diced tomatoes. Stir well to combine and cook for 2 more minutes. Remove from heat and stir in sour cream.
03 - Warm the tortillas slightly for easier rolling. On each tortilla, sprinkle a little of both cheeses, then add a generous spoonful of the beef mixture. Top with more cheese and a pinch of cilantro, if using. Roll into burritos by folding in the sides, then rolling tightly from the bottom.
04 - Heat a clean skillet or griddle over medium heat. Add a bit of butter, then place burritos seam side down. Grill for 2–3 minutes per side until golden brown and crispy, and the cheese is beautifully melted.
05 - Slice the burritos in half and serve immediately with salsa or guacamole.
