Spread 1/2 Tbsp of butter on one side of each slice of bread.

Set a cast iron skillet or heavy non-stick pan over medium/low heat. If using a griddle, set temperature to 135°C (275°F). Place 2 slices of bread into the skillet with the buttered side down.

Stack cheddar, Havarti, and Gouda cheese slices on one piece of bread. Once the bread is golden brown, close the sandwich with the crisp sides on the outside.

Cook until the bread is a rich golden brown, flipping once and lightly pressing down to adhere the bread to the cheese. Total cooking time is about 5 to 6 minutes. Maintain medium-low heat to allow the bread to toast slowly and cheese to melt completely.

Once the cheese has melted and the breads are browned, remove the sandwich from the skillet. Slice diagonally to serve. Repeat the process with the next sandwich.
