In a small mixing bowl, mix the softened cream cheese with 2 tsp of honey until smooth and creamy.

Lay one tortilla flat on a clean surface. Spread a generous layer of the honey cream cheese mixture evenly over the whole tortilla. Place 3 slices of ham over the cream cheese. Then, lay 1-2 slices of cheese on top so it covers most of the tortilla. If adding spinach or cucumbers, layer them here.

Roll the tortilla tightly into a log shape. Slice into 1-inch pinwheels using a sharp knife. You should get 8-10 pinwheels per wrap. Wrap the log in plastic wrap and place it in the fridge for 15-30 minutes if needed to firm up before slicing.
