Preheat the oven to 375°F and cover a baking sheet with parchment paper.

Lay the crescent dough flat on your counter. Seal any gaps in the seams to form a single sheet.

Spread Dijon (if you'd like) across the dough. Lay down the ham slices, then layer cheese on top.

Roll the sheet up tightly from a long edge. Slice the roll into pieces about an inch thick.

Put the slices on the prepared baking tray. Brush each with melted butter, and sprinkle a little poppy seed on top if you'd like.

Pop them in the oven for 12-15 minutes, until the top is golden and cheese is bubbling.
