11 - 2 tablespoons milk
12 - 1 tablespoon butter
13 - Salt to taste
14 - Black pepper to taste
15 - 8 slices ham
16 - 8 slices Colby-Jack cheese

→ For Finishing

17 - Maple syrup for brushing or serving
18 - Butter for the griddle
19 - Optional hot sauce

# Steps:

01 - In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, combine milk, egg, melted butter, vanilla, and maple syrup. Pour the wet ingredients into the dry ingredients and stir just until combined.
02 - Let the pancake batter rest for 5 minutes to produce softer, fluffier pancakes.
03 - Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
04 - Pour approximately ¼ cup batter for each pancake, keeping them around 4 inches wide. Cook until bubbles appear on the surface and edges begin setting. Flip and cook until golden. Repeat to make 16 pancakes.
05 - Whisk together eggs, 2 tablespoons milk, salt, and pepper. Melt butter in a skillet over medium-low heat and gently scramble the eggs until soft. Avoid overcooking.
06 - Heat ham in a skillet for approximately 30–60 seconds per side to enhance flavor and ensure it is warm.
07 - Place one warm pancake on your work surface. Top with cheese, ham, and scrambled eggs. For extra cheese, add another half slice over the eggs.
08 - Place another pancake over the filling and press gently.
09 - Place the assembled sandwiches onto a skillet over medium-low heat. Cover the skillet and heat for 1–2 minutes per side until the cheese melts and the sandwich is warm.
10 - Brush the top pancake lightly with maple syrup or serve syrup on the side.
11 - Serve the sandwiches immediately while warm with the cheese melted.

# Tips:

01 - For softer pancakes, let the batter rest before cooking.
02 - Use maple syrup sparingly to avoid making the sandwiches overly wet.
03 - Warm the ham before assembly for better flavor and even temperature throughout the sandwich.
