Set your oven to warm up to 425°F.

Slice the potatoes up into chunks about 1½ inches big.

Mix the potato chunks with rosemary, salt, pepper, and olive oil until every piece is covered well.

Put the potatoes into a greased baking dish, spreading them evenly.

Pop them in for 30-35 minutes, giving them a flip midway through cooking. Check until they’re soft and golden brown.

Add the chopped parsley on top right before serving.
