Homemade Chicken Chow Mein (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 tablespoons of cooking oil
02 - 12 ounces of uncooked chow mein noodles
03 - 1 pound of skinless, boneless chicken breast

→ Vegetables

04 - 1 large carrot cut into thin strips
05 - 2 cups of finely shredded cabbage
06 - 2 cloves of garlic, finely chopped
07 - Half a bunch of spring onions, sliced

→ Sauce

08 - 1 tablespoon of white sugar
09 - 6 tablespoons of oyster sauce
10 - Half a cup of chicken stock
11 - 1 tablespoon of cornstarch
12 - 3 tablespoons of soy sauce (low sodium)
13 - 3 tablespoons of mild sesame oil

# Instructions:

01 - Mix the soy sauce, sesame oil, oyster sauce, sugar, chicken broth, and cornstarch in a small bowl until smooth and lump-free.
02 - Follow the package instructions to prepare the noodles. Drain them, give them a rinse with cold water, and set aside.
03 - In a big skillet or wok, heat up the oil over medium heat. Slice the chicken into strips and cook until it’s golden and no longer raw. Take it out and leave it on the side.
04 - Toss the garlic, cabbage, and carrots into the same pan. Cook until the carrots are tender, and the cabbage is soft and slightly transparent.
05 - Throw the chicken and noodles back into the pan. Drizzle the sauce over it all and stir well. Let it heat for a few minutes so everything melds together.
06 - Sprinkle with the green onions and dish it out while it’s still steaming.

# Notes:

01 - Already cooked chow mein noodles require about 1 pound by weight.
02 - For the best result, go for sesame oil that’s not the toasted kind.
