Rich Italian Soup (Print Format)

A creamy Parmesan-based stew with Italian sausage, spinach, and mushrooms. Great for chilly nights or a fast, flavorful meal.

# Ingredients:

01 - 1 lb Italian sausage, casings off.
02 - 2 tbsp of olive oil.
03 - 4 cups of chicken stock.
04 - 1 large onion, diced.
05 - 3-4 garlic cloves, finely chopped.
06 - 1½ cups of chopped tomatoes.
07 - 2 tsp of dried Italian herbs.
08 - Salt and black pepper as needed.
09 - 1 cup of sliced mushrooms.
10 - 1½ cups of grated Parmesan, divided.
11 - 2 cups of thick whipping cream.
12 - 2 cups of spinach, stems taken off.

# Steps:

01 - Cook sausage in hot oil in a large pot.
02 - Stir in onion and garlic, cook till soft.
03 - Add mushrooms and cook for about 4 minutes.
04 - Pour in stock, tomatoes, and spices. Let simmer 10 minutes.
05 - Lower the heat and mix in cream and 1¼ cups of Parmesan.
06 - Toss in spinach and let it wilt down.
07 - Sprinkle the last of the Parmesan on top before dish is ready.
