05 - Fresh rosemary, 2 tablespoons, chopped
06 - Fresh thyme, 2 tablespoons, chopped
07 - Chicken ham, 1 cup, diced

→ Plugging in the Extras

08 - Whole-wheat breadcrumbs, 1 cup
09 - Vegetable or chicken stock, 1 cup

# Steps:

01 - Preheat oven to 190°C (375°F) and position rack in the center. Line a sturdy roasting pan with aluminum foil and place a roasting rack inside.
02 - Ensure lamb racks are frenched. Arrange the racks into a crown shape by joining the ends together and tying the base with kitchen twine.
03 - In a bowl, combine rosemary, thyme, parsley, and crushed garlic. Optional: add 1 tablespoon Dijon mustard or honey for additional flavor.
04 - Generously season lamb crown with kosher salt and ground black pepper. Coat with prepared herb mixture evenly and let sit at room temperature for 20-30 minutes.
05 - Pour 1 cup of low-sodium chicken broth into the roasting pan. Place lamb crown onto the rack and roast for approximately 1 hour, or until internal temperature reaches 63°C (145°F) for medium-rare. Baste halfway through.
06 - Remove lamb from oven and let rest for 15-20 minutes. Carve between the bones and serve alongside roasted vegetables or fresh salad.

# Tips:

01 - Resting the lamb is crucial to redistribute juices and ensure a tender texture.
