03 - 4 ounces mild diced green chilis

→ Dairy

04 - 8 ounces shredded Colby Jack cheese

05 - 1 tablespoon chopped fresh cilantro

# Steps:

01 - Preheat the oven to 425°F and spray a 9x13 inch glass baking dish with cooking spray.
02 - Place frozen beef and cheese taquitos in a single layer in the prepared baking dish.
03 - Pour enchilada sauce evenly over the taquitos, then distribute the diced green chilis on top.
04 - Sprinkle shredded Colby Jack cheese over the entire dish and bake for 20 to 25 minutes until the cheese is melted and bubbly.
05 - Let rest for 5 minutes after baking, then garnish with chopped fresh cilantro before serving.

# Tips:

01 - Leftovers can be refrigerated in an airtight container for up to 2 days; tortillas will soften over time. Reheat until heated through using microwave or oven.
02 - For a variation, add a layer of refried beans or refried black beans beneath the taquitos before adding sauce and cheese.
03 - If using homemade enchilada sauce, use approximately 1.25 to 1.5 cups.
