Preheat your oven to 375°F, then line a few baking trays with parchment paper.

Beat the sugar and butter together for about one minute, until creamy and fluffy.

Stir in the zest and egg, mixing for half a minute.

Add the salt and baking powder, then slowly mix the flour in until it all sticks together.

Form balls with a tablespoon and set them an inch apart. Flatten them gently with the bottom of a glass.

Pop them in the oven for 8–10 minutes, flipping the trays in the middle of baking.

Leave on the baking trays for 5 minutes to cool, then move them onto racks to finish cooling.

Combine lemon juice and powdered sugar, and coat the cookies once they’ve cooled off.
