Sweet Citrus Treats (Print Version)

# Ingredients:

01 - Two sticks (1 cup) of unsalted butter, softened.
02 - One large egg.
03 - 3/4 cup white sugar, granulated.
04 - Medium lemon zest, from one fruit.
05 - 1/4 teaspoon of salt.
06 - 1/2 teaspoon baking powder.
07 - Two cups of all-purpose flour.
08 - Three tablespoons of lemon juice, freshly squeezed.
09 - 2 cups powdered sugar.

# Instructions:

01 - Preheat your oven to 375°F, then line a few baking trays with parchment paper.
02 - Beat the sugar and butter together for about one minute, until creamy and fluffy.
03 - Stir in the zest and egg, mixing for half a minute.
04 - Add the salt and baking powder, then slowly mix the flour in until it all sticks together.
05 - Form balls with a tablespoon and set them an inch apart. Flatten them gently with the bottom of a glass.
06 - Pop them in the oven for 8–10 minutes, flipping the trays in the middle of baking.
07 - Leave on the baking trays for 5 minutes to cool, then move them onto racks to finish cooling.
08 - Combine lemon juice and powdered sugar, and coat the cookies once they’ve cooled off.

# Notes:

01 - Let the glaze set fully before putting them away.
02 - Keeps up to 5 days at room temp.
03 - Use fresh-squeezed lemon juice for tastier results.
