Mashed Potato Bites (Print Version)

# Ingredients:

01 - 1/2 teaspoon smoked paprika (optional).
02 - 1/4 cup grated Parmesan cheese.
03 - 1/2 teaspoon garlic powder.
04 - 1 cup shredded cheddar cheese.
05 - Salt and pepper, add as needed.
06 - 2 large eggs.
07 - 2 green onions, diced.
08 - 2 cups mashed potatoes.
09 - 1/4 cup milk.

# Instructions:

01 - Set your oven to 400°F and grease up a muffin tin.
02 - Combine potatoes, onions, eggs, milk, cheeses, and spices in a bowl. Stir till creamy.
03 - Spoon the mix, filling each muffin cup about 3/4 of the way.
04 - Pop in the oven for 20 to 25 minutes, or till tops are golden.
05 - Let them rest in the tin for a bit before taking them out.

# Notes:

01 - Starchy spuds make them fluffier.
02 - Mix in bacon bits or diced ham if you’d like.
03 - Sprinkle some cheese on top before baking.
04 - Serve these with a dollop of sour cream.
05 - Grease the tin well so nothing sticks!
