01 -
Preheat the oven to 375°F. Lightly grease a 9 x 5-inch loaf pan or similar baking dish.
02 -
Place peeled and cubed potatoes in a large pot. Cover with cold salted water and bring to a boil. Cook for 15–20 minutes or until very tender.
03 -
Drain thoroughly. Add butter, warm milk, sour cream, salt, and pepper. Mash until creamy and set aside.
04 -
In a large bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, parsley, Italian seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined, avoiding overworking the meat.
05 -
Press the meat mixture evenly into the prepared loaf pan without compacting it too tightly.
06 -
In a small bowl, mix ketchup, brown sugar, Worcestershire sauce, and optional Dijon mustard. Spread most of the glaze over the meatloaf, reserving a little for later if desired.
07 -
Bake the meatloaf for approximately 40–45 minutes.
08 -
Remove the pan carefully from the oven. Spread the mashed potatoes evenly over the meatloaf, creating swirls or peaks with a spoon.
09 -
Sprinkle shredded cheddar evenly over the mashed potatoes.
10 -
Bake for another 15–20 minutes until the meatloaf reaches 160°F in the center and the cheese is melted.
11 -
Broil for 1–3 minutes for a more golden cheese topping. Watch closely to avoid burning.
12 -
Let the meatloaf rest for 10 minutes to help it hold together when sliced.
13 -
Slice into thick portions. Top with parsley or green onions if desired and serve warm.
