Mediterranean Shrimp with Peppers (Print Format)

# Ingredients:

01 - 1 1/4 lb large shrimp or prawns, peeled and deveined

→ Seasoning

02 - 1 tbsp all-purpose flour
03 - 1 to 2 tsp smoked Spanish paprika
04 - 1/2 tsp salt
05 - 1/2 tsp black pepper
06 - 1/2 tsp ground coriander
07 - 1/4 tsp cayenne pepper
08 - 1/4 tsp sugar

→ Fats

09 - 1 tbsp ghee (clarified butter) or butter
10 - 3 tbsp extra virgin olive oil

→ Vegetables

11 - 3 shallots, thinly sliced
12 - 4 garlic cloves, chopped
13 - 1/2 green bell pepper, cored and sliced
14 - 1/2 yellow bell pepper, cored and sliced
15 - 1 cup canned diced tomatoes

→ Liquids

16 - 1/3 cup chicken or vegetable broth
17 - 2 tbsp dry white wine
18 - 2 tbsp fresh lemon juice

→ Herbs

19 - 1/3 cup chopped fresh parsley leaves

# Steps:

01 - Pat the shrimp dry and place them in a large bowl. Add flour, smoked paprika, salt, pepper, ground coriander, cayenne, and sugar. Toss to coat shrimp evenly.
02 - In a large cast iron skillet, melt ghee with olive oil over medium heat. Add sliced shallots and chopped garlic. Cook 2 to 3 minutes until fragrant, stirring regularly to avoid burning.
03 - Add the sliced green and yellow bell peppers to the skillet. Sauté for about 4 minutes, tossing occasionally until slightly softened.
04 - Add the coated shrimp to the skillet and cook for 1 to 2 minutes. Stir in diced tomatoes, broth, white wine, and lemon juice. Continue cooking for 2 to 3 minutes until shrimp turns bright orange and sauce slightly reduces.
05 - Remove from heat and stir in chopped fresh parsley. Serve immediately.
