Copycat Taco Bell Mexican Pizza (Print Format)

Golden tortillas layered with beef, beans, sauce, and cheese for a crave-worthy diner-style treat.

# Ingredients:

01 - 1 lb ground beef or turkey or chicken
02 - 1 yellow onion, diced (optional)
03 - 1 packet taco seasoning
04 - 1/4 cup water
05 - 3/4-1 cup canola, vegetable, or avocado oil
06 - 12 taco-sized flour tortillas
07 - 15 oz can of refried beans
08 - 10 oz can of red enchilada sauce
09 - 8 oz shredded cheddar cheese
10 - 8 oz shredded pepper jack cheese
11 - 1-2 tomatoes, chopped
12 - 2-3 tablespoons sliced green onions

# Steps:

01 - In a large skillet over medium heat, brown the ground beef with the diced onion until fully cooked and onions are softened. Drain excess grease. Stir in taco seasoning and 1/4 cup water. Reduce heat to low and simmer 3–5 minutes until thickened. Remove from heat.
02 - In a separate skillet, heat the oil over medium-high heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Transfer to a paper towel-lined plate to drain.
03 - Preheat oven to 400°F / 200°C. Line a sheet pan with parchment paper.
04 - Assemble each pizza by spreading refried beans on one tortilla, adding seasoned beef, then a sprinkle of cheese. Top with a second tortilla. Spread enchilada sauce over the top tortilla and sprinkle with additional cheese.
05 - Repeat to make 6 pizzas and place on prepared sheet pan. Bake for 6–8 minutes, or until cheese is melted and bubbly.
06 - Remove from oven and top with chopped tomatoes and green onions. Serve immediately.

# Tips:

01 - These are best served fresh. Refrigerated leftovers may become soggy.
02 - Reheating in an oven or air fryer may not restore crispness effectively.
